Introduction:
The artist selected to goes by the stage name Rome. I have not seen or heard much from him since the release of his self-titled album “Rome” in 1997. The genre is an American R&B and the song presented tonight is “I Belong to You(2). The whole album is just hot trust me on that. The video was uploaded to YouTube in 1997 as well.

I am feeling a bit blue and lonely and need that music pick me up. It’s the end of a lovely three day summer week-end and that of course compounds my sentiments. The band I am going to pick is from the 70’s. Yes, you are going to have stretch and dig deep into that memory card for Ambrosia and the song is titled "How Much I Feel."(1)

Grilled T-Bone and Shrimp served alongside Spicy Okra with Crab Meat over Steamed White Rice for a Slow Sunday Dinner!

One of my very favorite dishes is spicy okra with crab meat over white rice. This Sunday, I menu is a grilled T-Bone and Shrimp served alongside Spicy Okra with Crab Meat over Steamed White Rice.  You can review my previous posts to see how I grilled the steak and shrimp. The secret is fresh lime juice, Webbers Cajun Seafood spice for the shrimp and Webbers Chicago Style Steak spice for the T-Bone.

My cooking focus for today is the spicy okra with crab meet over steamed white rice.

Spicy Crab and Okra Ingredients:

1 lbs. okra
1/2 red onion – chop in thin long slices and then cross cut.
1/4 fresh jalapeno without seeds - minced
1 bunch of cilantro
1 can of Rotel Tomatoes/Cilantro/Lime/Jalapeno
1 clove garlic - minced
2 Tbsp. vegetable oil
1 1/2 tsp. chile powder
1 tsp. ground cumin seeds
1 Tbsp. chicken bouillon
1/4 tsp. cayenne
1/2 tsp. salt plus more to taste
1/2 lemon for juice
1/2 to 1 lb. fully cooked crab meat.

Preparation:
Trim off the stem ends from the okra and cut the pods into 1/4- to 1/2-inch slices place in bowl. Then peel and thinly slice the onion adding to the bowl of okra along with the minced jalapeno. Heat oils in a medium to a large frying pan and sauté all the ingredients in the bowl over a medium high heat. Browning the okra will eliminate the slime factor. After 3-5 minutes add the mince the garlic and set them both aside. I only stir occasionally.

Add chile powder, ground cumin seeds, salt and cayenne, to the okra and cook, stirring, another 30 seconds. Add the can of tomatoes, lime juice and chicken bouillon and 1 cup of water. Stir combine and cover. Reduce heat to maintain a steady simmer and cook until okra is tender and flavors are blended, 3 to 5 minutes. Add the cooked crab meat at the very end and simmer for an additional 3 minutes.

Serve over steamed white rice.
