Texas Mexican Breakfast: Migas con Chile (1) |
Introduction:
To celebrate my son’s birthday, I am going to fix him a breakfast made
for a prince.
Migas: (my recipe)
5 or 6 pieces of turkey bacon cooked on medium heat until crispy. Remove
when complete and set on paper towels to cool and remove excess grease.
5 or 6 tortillas slice in long thin strips. Place these tortilla strips
into a hot pan that was covered with 3 table spoons of oil and let cook until
they are crispy. Remove when complete and set on paper towels to cool and
remove excess grease.
Sauté in the left of grease minced ½ cup of red onion, one clove of
garlic and ½ a jalapeno w/o seeds.
6 or 7 eggs are whisked for about 5 minutes and add a dash of pepper and
salt.
Once all the ingredients are ready to combine, put the eggs in first on
a medium heat then add the turkey bacon chopped up and tortilla strips, onion,
garlic and jalapeno. Do not
stir constantly only on occasion. This dish is great with orange/pinnacle juice
and hot sauce.
