Friday Night Snack - Its a Party!

Cheese Nachos (1)
I love Friday nights. I get the week-end to recover from a week from perdition. The first thing I am going to do is make me a snack fit for a queen and then curl up and watch a great movie. My snack tonight will be homemade nachos with a Corona beer. Nachos: (my recipe)

5 or 6 Corn tortillas (for more people just add ingredients)
1 cup of olive oil
¼ cup of minced cilantro
¼ cup of chopped up cherry tomatoes
½ cup of strained black beans
2 avocados (firm cut into small wedges or cubes)
Ranchero Cheese (you will have to by the whole cheese and cut into small thin slices)
¼ cup of sliced jalapenos (canned)
¼ cup of minced red onion.
1 lime (add to the avocado wedges)
1 pinch of salt, black pepper and cayenne (add to the avocado wedges)

I would recommend that you heat up your oil for about 5 minutes on high heat. Remember the oil needs to be at its very hottest, possible. Cut the tortillas up into four squares. Place the tortillas squares into the hot oil and let fry on both sides until light brown and crispy. Set crispy tortillas squares on a paper towel to soak up left over grease, if any.

Once the tortillas strips are cool enough to work with, place them strategically on a platter (not piled up) and add the small slices of the ranchero cheese to each square. Microwave for at least 1 minute or until the cheese melts. Add the rest of the ingredients as a topper and you’re ready to go. Oh, don’t forget the Corona beer or two with a slice of lime.
